New (to me!) truck with tire question

I just bought my '03 3500 dually and couldn't be happier! Actually I could be
Today I had to have my tires that came on the truck, switched out for narrower tires. The truck had Big O Bigfoot 265/70 R17's on it and boy did it look good! The unfortunate thing is that with that size tire, there was less than 1 inch between the rear dualls. I don't think this is a problem if you never haul a load with any weight to it, but that certainly is not the case with me. I often haul cattle loads in the 11,000 to 12,000 lb. range.
So after talking with local tire stores, I made the decision to put on some 245/75 R17 take off tires that this one dealer had for $90 each rather than buy a whole new set of tires after just buying a truck with almost new tires on it. Now I need to sell the Big O's privately.
What's killing me is that these highway tires look like compared to those Big O's for obvious reasons. I was wondering what the rest of you folks are running on your duallies for tire size.
When I had my '97 dually I ran 235/85 R16's and liked them. I love the look of 19.5's with 265's but again question how anyone can run those size tires on a dually that pulls heavy loads.
Anyhow, I was just curious what everyone else is using on their rigs. I am a new member and this is my first post so please bear with me! I have had Cummins trucks since 1998 and at one time between my father and I on the ranch, we had 4 Cummins altogether! I LOVE 'EM! Thanks in advance!
Oh yeah, by the way I have to tell everyone that this '03 is awesome. I've been driving my 98.5 since buying it new, and just have to say...what a difference in power and comfort! I found a sweet deal using the net. My '03 truck only has 27,000 miles on it and it's 4 years old! Plus, it was sitting on a Chevy dealership, so the saleman didn't advertise it very well because he really didn't know what all the truck had on it. I was pleasantly surprised when I arrived to find the truck has some aftermarket items on it that the saleman didn't know about.
