How hot is HOT?

I have ben looking for a straight answer on how hot the engine should get before the fan comes on. The local dealer said 220

which seems a little warm to me. Today pulling a 35' gooseneck with an old furd diesel on it the attitude showed an engine temp of 217 and i never heard the fan kick in. BTW this was on a 2 mile long 8% grade going 60 mph and egt of 1000. thanks in advance. I just dont want to melt my favorite motor.
