Torque Converter Stall Speed

What things do I need to take into consideration when choosing a stall speed? (or when and if I speak to a company to order a converter)

It's the truck in the Sig. I plan to run 500hp on a big single, commuter/daily driver with some occassional drag strip time and ALOT of street racing. Also I might be towing a goose neck from time to time.

I'm curious about the speed only beause i've seen some trucks put down faster E.T.s with the TCC unlocked down the track, so i'd like one with good coupling AND good driveability. I know it's a trade off between steetability and all out performance.

Tell me what you think/know about torque converters and their stall speeds.
