What causes all the black smoke??

I have had 8 CTD's and only my 2 first gens billowed the black stuff. I was behind a 2nd gen today and it was pouring out the black smoke under throttle. None of my 2nd gens smoked. What causes this cause I miss it and want it back. There was nothing better when someone was tailgating to lay on the skinny pedal and fog 'em out.
