Which Exhaust?

I'm new to Cummins and need some advice. I will be upgrading the exhaust but don't know what the stainless system of choice is. I've never had a diesel with a cat before and with ever tightening emission requirements I'm not sure it would be wise to lose it. I will be setting the truck up to tow, not race so how much of a performance difference will there be between a turbo back system and a cat back system? Thanks, Jeff
